Ingredients
  

Dry Ingredients

  • 1 cup rolled oats
  • 1 cup all-purpose flour (can substitute with gluten-free flour) Use gluten-free flour for a gluten-free option.
  • 1/4 cup chia seeds
  • 1/2 teaspoon salt
  • 1 tablespoon baking powder

Wet Ingredients

  • 1/4 cup honey or maple syrup
  • 1 cup warm water
  • 1/4 cup olive oil (or any preferred oil)

Optional Additions

  • 1/2 cup nuts or dried fruits Optional for added flavor.

Preparation

  • Preheat your oven to 350°F (175°C). Grease a loaf pan or line it with parchment paper.
  • In a large bowl, combine the rolled oats, all-purpose flour, chia seeds, salt, and baking powder. Stir until well mixed.
  • In a separate bowl, whisk together the honey (or maple syrup), warm water, and olive oil.
  • Pour the wet ingredients into the dry mixture and stir until just combined. Fold in the nuts or dried fruits if desired.
  • Pour the batter into your prepared loaf pan, smoothing the top with a spatula.

Baking

  • Place the loaf in your preheated oven and bake for about 45-50 minutes, or until a toothpick inserted in the center comes out clean.
  • Once baked, remove the bread from the oven and let it cool in the pan for about 10 minutes, then transfer it to a wire rack to cool completely before slicing.

Notes

For added moisture, consider making chia gel by mixing 1 tablespoon of chia seeds with 3 tablespoons of water and letting it sit for 15 minutes before adding to the batter. Store in an airtight container at room temperature for up to 3 days or refrigerate for up to a week. Freeze sliced bread in freezer-safe bags if desired.
