Ingredients
  

  • 1 cup certified gluten free rolled oats
  • 1/2 cup natural peanut butter (no added sugar or oils)
  • 1/4 cup honey or maple syrup
  • 2 tbsp ground flaxseed
  • 1 tsp vanilla extract
  • 1 pinch sea salt
  • 1/4 cup mini chocolate chips (optional)

Instructions
 

  • In a mixing bowl, combine oats, peanut butter, honey or maple syrup, flaxseed, vanilla extract, and a pinch of sea salt.
  • Stir until the mixture is well combined. If adding chocolate chips, fold them in at the end.
  • If mixture is too sticky, chill in the fridge for 10 minutes. If too dry, add a little more peanut butter.
  • Using clean hands or a small scoop, roll the mixture into 1-inch balls.
  • Store in an airtight container in the fridge for up to 7 days, or freeze for longer storage.

Notes

For a nut free version, use sunflower seed butter. To make them vegan, swap honey for maple syrup and use dairy-free chocolate chips. Add ins like chopped almonds, coconut flakes, or cinnamon offer variety. Chill mixture if sticky or add extra peanut butter if dry.
