Ingredients
  

Wet Ingredients

  • 1 cup creamy peanut butter
  • 3/4 cup granulated sugar
  • 3/4 cup brown sugar, packed
  • 3 large eggs
  • 1 teaspoon vanilla extract

Dry Ingredients

  • 1 teaspoon baking soda
  • 2 1/2 cups rolled oats

Mix-ins

  • 1 cup chocolate chips
  • 1/2 cup M&M's (optional)

Instructions
 

Preparation

  • Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
  • In a large mixing bowl, combine the peanut butter, granulated sugar, and brown sugar. Mix until creamy and smooth.
  • Beat in the eggs one at a time, followed by the vanilla extract. Ensure everything is well combined.
  • Add baking soda and oats, and mix until incorporated.
  • Gently fold in the chocolate chips and M&M's if you're using them until just mixed.

Baking

  • Use a cookie scoop or tablespoon to form mounds of dough and place them on your prepared baking sheet, leaving space between each.
  • Bake in the preheated oven for about 10-12 minutes, or until the cookies are lightly golden.
  • Allow the cookies to cool on the baking sheet for a few minutes before transferring them to a wire rack.

Notes

Don't overmix the batter to avoid tough cookies. Store properly in an airtight container at room temperature for up to a week. For gluten-free, check variations.
