Ingredients
  

Main Ingredients

  • 1 lb boneless, skinless chicken thighs or breasts, cut into 1-inch strips Thighs stay tender even if slightly overcooked; breasts are leaner but cook faster.
  • 2 tablespoons olive oil Divided into 1 tablespoon for cooking chicken and 1 tablespoon for vegetables.
  • 1 medium red onion, thinly sliced
  • 2 pieces bell peppers (mixed colors), sliced
  • 1 medium zucchini, halved and sliced
  • 1 cup cherry tomatoes, halved
  • 3 cloves garlic, minced
  • 1 piece lemon (zest + juice) Zest adds bright aroma.
  • 1 teaspoon dried oregano
  • 1/2 teaspoon smoked paprika
  • to taste Salt and pepper
  • 1/4 cup pitted olives, halved Can be swapped with capers or roasted artichoke hearts.
  • 2 tablespoons chopped fresh parsley
  • Optional: crumbled feta for serving, warm flatbreads or rice Feta can be replaced with a dairy-free crumb or omitted.

Instructions
 

Preparation

  • Pat the chicken dry and season with salt, pepper, oregano, and smoked paprika.
  • Halve the cherry tomatoes, slice the vegetables, and mince the garlic.

Cooking

  • Heat a large skillet or wok over medium-high heat and add 1 tablespoon olive oil.
  • When hot, add the chicken in a single layer and sear for 3–4 minutes without moving to get a nice color.
  • Flip and cook another 2–3 minutes until just cooked through. Remove the chicken to a plate.
  • Add the remaining tablespoon of olive oil to the skillet, toss in the sliced onion and bell peppers, cooking for 3 minutes until they begin to soften.
  • Add the zucchini and garlic, stirring frequently for 2 minutes until vibrant and slightly crisp.
  • Return the chicken to the pan, add the cherry tomatoes and olives, then zest and squeeze the lemon over everything.
  • Stir to combine and cook for another 1–2 minutes to meld flavors.
  • Taste and adjust seasoning, finish with chopped parsley and a sprinkle of crumbled feta if desired.

Notes

For balanced meals, add a handful of spinach at the end and let it wilt. Store leftovers in an airtight container for up to 3 days.
