Ingredients

  • 8 oz gluten-free pasta penne, fusilli, or spaghetti
  • 1 lb chicken breast diced or thinly sliced
  • 2 tbsp olive oil
  • 3 cloves garlic minced
  • 1 red bell pepper sliced
  • 1 zucchini sliced into half-moons
  • 0.5 cup cherry tomatoes halved
  • 0.25 cup kalamata olives pitted and halved
  • 2 tbsp sun-dried tomatoes chopped
  • 0.5 tsp dried oregano
  • 0.5 tsp dried basil
  • salt and black pepper to taste
  • 0.25 cup crumbled feta cheese optional
  • 0.5 lemon juice of
  • fresh parsley for garnish

Instructions
 

  • Bring a large pot of salted water to a boil. Cook the gluten-free pasta according to package directions. Drain and set aside, reserving 1/4 cup of pasta water.
  • In a large skillet, heat 1 tbsp olive oil over medium heat. Season chicken with salt, pepper, and a sprinkle of oregano. Cook for 6–8 minutes until golden and cooked through. Remove and set aside.
  • Add remaining olive oil to the skillet. Sauté garlic, red bell pepper, zucchini, and cherry tomatoes for 4–5 minutes, until vegetables soften and garlic is fragrant.
  • Return cooked chicken to the pan. Stir in olives, sun-dried tomatoes, dried basil, and lemon juice. Add cooked pasta and reserved pasta water. Toss everything to combine.
  • Top with crumbled feta (if using) and garnish with fresh parsley. Serve warm.

Notes

This recipe is easily adaptable: skip the cheese for dairy-free, add chickpeas for vegetarian, or use red pepper flakes for heat. Keeps well for meal prep and reheats with a splash of lemon or water.
