  • 1 medium head medium head of cabbage, chopped Choose a fresh head for best texture.
  • 1 pound ground beef or turkey Lean options like turkey can help keep the dish lower in fat.
  • 1 medium onion, chopped
  • 2 cloves garlic, minced
  • 1 can diced tomatoes (15 oz) Ensure they are gluten-free if necessary.
  • 1 cup uncooked cauliflower rice Can substitute with regular rice if not low-carb.
  • 1 teaspoon paprika
  • to taste Salt and pepper
  • 1 cup shredded cheese (optional) Use your favorite cheese.

Preparation

  • Preheat your oven to 350°F (175°C).
  • In a large skillet, brown the ground beef or turkey over medium heat. Stir in the onion and garlic, cooking until the onion is translucent.
  • Fold in the chopped cabbage and sauté until it begins to wilt.
  • Stir in the diced tomatoes, cauliflower rice, paprika, salt, and pepper. Let it simmer for about 5 minutes.
  • Pour the mixture into a greased casserole dish.
  • If desired, sprinkle shredded cheese over the top before baking.
  • Cover the dish with foil and bake for 30 minutes. Remove the foil and bake for another 10-15 minutes, or until the cheese is bubbly and golden.

Notes

This casserole keeps well in the fridge for up to 4 days. Allow it to cool completely before transferring to an airtight container. Reheat in the oven or microwave before serving. For quick meals during the week, making a double batch is a great idea.
