Ingredients
  

Cabbage and Vegetables

  • 1 onion, diced Use yellow or white onion for best flavor.
  • 3 cloves garlic, minced Adjust garlic to taste.
  • 1 can diced tomatoes (14.5 oz) with juice Fresh tomatoes can be substituted.

Cheese and Seasoning

  • 2 cups shredded mozzarella cheese Feel free to use other cheese varieties.
  • 1 teaspoon Italian seasoning Add more for stronger flavor.
  • to taste Salt and pepper Season according to preference.

Cooking Ingredients

  • 2 tablespoons olive oil Can substitute with another cooking oil.

Preparation

  • Preheat your oven to 350°F (175°C).
  • In a large pot, bring water to a boil and add the chopped cabbage. Boil for about 5 minutes or until tender. Drain and set aside.
  • In a skillet, heat the olive oil over medium heat. Add the diced onion and garlic, sautéing until they are soft and fragrant. Add the ground beef and cook until browned. Season with Italian seasoning, salt, and pepper.
  • In a large mixing bowl, combine the cooked cabbage, beef mixture, and diced tomatoes. Stir to combine everything evenly.

Assembly and Baking

  • In a greased 9x13 inch baking dish, spread half of the cabbage mixture. Layer half of the mozzarella cheese over the cabbage mixture. Repeat with the remaining cabbage mixture and top with the rest of the cheese.
  • Cover the casserole with foil and bake for 25 minutes. Remove the foil and bake for another 15-20 minutes, or until the cheese is melted and bubbly.

Notes

To prevent a soggy casserole, ensure that cabbage is well-drained after boiling. You can also sauté it lightly to evaporate any excess moisture. For a unique twist, consider adding a gluten-free streusel topping made from almond flour and spices to give your casserole a crunchy finish.
