  • 1 pound ground beef
  • 1 cup bacon, chopped Cook until crispy
  • 1 medium onion, diced
  • 2 cups cauliflower, riced
  • 1 cup shredded cheddar cheese Divided
  • 1 cup heavy cream
  • 4 large eggs
  • 2 tablespoons Dijon mustard
  • 1 tablespoon Worcestershire sauce
  • Salt and pepper, to taste

Preparation

  • Preheat your oven to 350°F (175°C).
  • In a large skillet over medium heat, cook the chopped bacon until crispy. Use a slotted spoon to remove the bacon and drain on a paper towel, leaving the drippings in the skillet.
  • In the same skillet, add the ground beef and onion; season with salt and pepper. Cook until the beef is browned and the onions are translucent, about 5-7 minutes.
  • In a large mixing bowl, combine the riced cauliflower, cooked beef and onion mixture, heavy cream, eggs, Dijon mustard, Worcestershire sauce, cooked bacon, and half of the shredded cheddar cheese. Mix until well combined.
  • Pour the mixture into a greased 9×13-inch casserole dish and spread evenly. Top with the remaining cheddar cheese.

Cooking

  • Bake for 35-40 minutes or until set and golden on top. The casserole should be slightly firm in the center.
  • Let it cool for a few minutes before garnishing with optional sliced tomatoes and pickles.

Notes

For a firmer texture, increase the amount of riced cauliflower or reduce the cream slightly. Pairing this casserole with a fresh salad can create a delightful meal.
