Ingredients
  

Meat and Dairy

  • 1 lb lean ground beef Ground turkey can be used as a substitute.
  • 8 oz cream cheese, softened Use full-fat for best texture.
  • 1/2 cup sour cream
  • 2 large eggs
  • 1 cup shredded cheddar cheese, plus extra for topping
  • 6 slices turkey bacon, chopped and cooked until crisp Can substitute with any preferred bacon.

Vegetables and Seasonings

  • 1 small onion, finely chopped
  • 2 cloves garlic, minced
  • 1/2 cup dill pickles, chopped (optional) Adds tanginess to the dish.
  • 1 tablespoon Worcestershire sauce
  • 1 teaspoon mustard powder or 1 tablespoon Dijon mustard
  • 1/2 teaspoon smoked paprika
  • Salt and pepper to taste
  • 2 cups riced cauliflower (optional for extra veggies) Can add to increase vegetable content.

Instructions
 

Preheat and prepare

  • Preheat your oven to 350°F (175°C). Grease an 8x8 or 9x9 baking dish.

Cook the beef and aromatics

  • In a large skillet over medium heat, cook the ground beef with chopped onion and garlic until browned. Drain excess fat if needed.
  • Stir in Worcestershire sauce, mustard, smoked paprika, salt, and pepper.

Mix the creamy base

  • In a mixing bowl, beat together the cream cheese, sour cream, and eggs until smooth.
  • Fold in 1 cup shredded cheddar and the chopped pickles if using.

Combine and layer

  • Stir the cooked beef (and riced cauliflower if using) into the creamy mixture.
  • Fold in most of the crispy chopped turkey bacon, reserving a little for topping.

Bake

  • Transfer everything to the prepared baking dish.
  • Sprinkle the remaining cheddar and reserved bacon on top.
  • Bake for 20–25 minutes, until the casserole is set and cheese is bubbly.

Rest and serve

  • Let rest 5–10 minutes before slicing.
  • Serve with a crisp green salad or roasted vegetables.

Notes

Don't overmix the cream layer to maintain a creamy texture. Use full-fat cream cheese for best flavor. Add extra cheese on top when reheating for a melty finish.
