  • 12 ounces your favorite pasta Choose a pasta shape that holds onto the sauce well.
  • 3 tablespoons unsalted butter Can be replaced with olive oil for a vegan option.
  • 2 cloves garlic, minced
  • 2 lemons Zest of
  • 1 cup fresh lemon juice Approximately 4-5 lemons.
  • Salt and pepper, to taste
  • 1/2 cup grated Parmesan cheese Or nutritional yeast for a vegan option.
  • Fresh herbs, such as basil or parsley, for garnish

Preparation

  • In a large pot of salted water, cook the pasta according to package instructions until al dente. Reserve about a cup of pasta water before draining.
  • In a large skillet, melt the butter over medium heat. Add minced garlic and sauté for about 1 minute until fragrant but not browned.
  • Stir in the lemon zest and juice, followed by salt and pepper. Allow the mixture to simmer for 2-3 minutes.
  • Add the drained pasta to the skillet and toss to coat. If the sauce is too thick, gradually add some reserved pasta water until desired consistency is reached.
  • Remove from heat and stir in the grated Parmesan cheese until well combined.
  • Garnish with fresh herbs and extra cheese, if desired. Serve hot and enjoy!

Notes

If you have any leftovers, Lemon Pasta can be stored in an airtight container in the refrigerator for up to 3 days. Reheat gently with a splash of water or extra lemon juice to restore creaminess.
