Ingredients
  

For the Chicken

  • 2 pounds boneless, skinless chicken thighs or breasts if you prefer
  • 3 pieces lemons (zest + juice) one sliced for roasting
  • 6 cloves garlic, minced
  • 2 tablespoons olive oil
  • 1 teaspoon dried oregano
  • 1 teaspoon smoked paprika

For the Vegetables

  • 1 large sweet potato, cubed
  • 2 cups Brussels sprouts, halved
  • 1 large red onion, sliced
  • Fresh parsley for garnish

Preparation

  • Preheat your oven to 425°F (220°C). Line a large baking sheet with parchment.
  • In a bowl combine lemon zest, juice from two lemons, minced garlic, olive oil, oregano, paprika, salt, and pepper.
  • Place chicken in a shallow dish and pour half the marinade over it. Let it sit for 15–30 minutes (or refrigerate up to 4 hours).
  • Toss sweet potato cubes, Brussels sprouts, and red onion with the remaining marinade on the baking sheet.

Cooking

  • Nestle the marinated chicken among the vegetables and tuck lemon slices on and around the chicken for caramelized flavor.
  • Bake for 25–30 minutes until the chicken reaches an internal temperature of 165°F (74°C) and vegetables are tender and slightly browned.

Serving

  • Let the chicken rest for 5 minutes, then slice and divide into meal containers with a portion of vegetables.
  • Sprinkle chopped parsley and a final squeeze of lemon before sealing the containers.

Notes

For a sweeter side, swap or add roasted apples. Marinate longer for deeper flavor for up to 4 hours. Use a thermometer for accurate doneness and keep chicken juicy.
