  • 1 pound chicken breast, sliced
  • 2 cups fresh vegetables (bell peppers, broccoli, and snap peas) Any mix of seasonal vegetables can be used.

Cooking Ingredients

  • 3 tablespoons olive oil Can use other oils as per preference.
  • 1 tablespoon soy sauce or gluten-free substitute Coconut aminos are a great alternative.
  • 2 cloves garlic, minced
  • to taste salt and pepper
  • to taste sesame seeds (optional for garnish)

Preparation

  • Start by washing and slicing all your vegetables and chicken breast.

Cooking

  • In a large frying pan or wok, heat the olive oil over medium-high heat.
  • Add the sliced chicken to the pan, seasoning with salt and pepper. Cook for about 5-7 minutes until golden brown and cooked through.
  • Stir in the minced garlic, followed by your chosen vegetables. Continue to cook for another 5-7 minutes, until the veggies are tender but still crisp.
  • Drizzle the soy sauce over the mixture, tossing everything together to ensure even coating.
  • Once everything is cooked through, remove from heat and garnish with sesame seeds if desired.

Notes

Use fresh vegetables for better flavor and color. Keep vegetables crisp for texture. For a gluten-free version, use gluten-free soy sauce or tamari. Consider adding shrimp or tofu for extra protein or nuts for crunch.
