  • 1/2 cup erythritol or your favorite keto-friendly sweetener
  • 2 teaspoons baking powder
  • 1/2 teaspoon salt
  • 3 large eggs
  • 1/4 cup unsweetened almond milk
  • 1/4 cup melted coconut oil
  • 1 teaspoon vanilla extract

Optional Toppings

  • sugar-free glaze, crushed nuts, or a sprinkle of cinnamon

Instructions
 

Preparation

  • Preheat your oven to 350°F (175°C) and grease a donut pan.
  • In a large bowl, whisk together the almond flour, erythritol, baking powder, and salt until thoroughly combined.
  • In a separate bowl, beat the eggs, almond milk, melted coconut oil, and vanilla extract together until smooth.
  • Gradually add the wet ingredients to the dry ingredients, stirring until just combined. Avoid over-mixing to ensure your donuts remain fluffy.
  • Spoon the batter into the prepared donut pan, filling each mold about three-quarters full.

Baking

  • Place the pan in the preheated oven and bake for 12-15 minutes or until a toothpick inserted into the center comes out clean.

Cooling and Topping

  • Allow the donuts to cool in the pan for a few minutes before transferring them to a wire rack. Once cooled, you can glaze them or top with your choice of nuts or spices.

Notes
