Ingredients
  

For the taquitos

  • 1 lb ground beef
  • 1 teaspoon chili powder
  • 1 teaspoon cumin
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • Salt and pepper, to taste
  • 8 small low-carb tortillas (almond or coconut flour)
  • 1 cup cheese (cheddar or Mexican blend) For sprinkling on the filling

Instructions
 

Preparation

  • Preheat your oven to 400°F (200°C).
  • Heat a skillet over medium heat and add the ground beef. Cook until browned, breaking apart with a spoon. Drain the excess fat.
  • Add chili powder, cumin, garlic powder, onion powder, salt, and pepper to the cooked beef. Stir well and simmer for 2-3 minutes.
  • Place a tortilla on a flat surface, add a spoonful of the beef mixture, and sprinkle with cheese. Roll tightly and place seam-side down on a baking sheet lined with parchment paper. Repeat with remaining tortillas.
  • Bake in the preheated oven for 15-20 minutes until golden brown and crispy.
