Ingredients

Main Ingredients

  • 4 medium-sized russet potatoes (or another starchy variety)
  • 2 tablespoons olive oil
  • to taste Salt
  • to taste Pepper

Optional Toppings

  • Sour cream (or a dairy-free alternative)
  • Chives or green onions
  • Grated cheese (or a vegan cheese alternative)
  • Baked beans
  • Chili
  • Roasted vegetables

Instructions

Preparation

  • Begin by scrubbing the potatoes under running water to remove any dirt. Pat them dry with a kitchen towel.
  • Use a fork to poke several holes in each potato. This will allow steam to escape while they cook, ensuring that they fluff up perfectly.
  • Rub the potatoes with olive oil, ensuring an even coating. Sprinkle salt and pepper generously over the potatoes for added flavor.

Cooking

  • Preheat your air fryer to 380°F (190°C) for about 5 minutes. Preheating helps in achieving that crispy skin everyone craves.
  • Place the potatoes in the air fryer basket, making sure they have enough space for air circulation. Cook for 35-40 minutes, turning the potatoes halfway through the cooking time for even browning.
  • After 35 minutes, check the potatoes by inserting a knife into the center. If it slides in easily, they’re ready! If not, continue cooking for another 5-10 minutes.
  • Carefully remove the potatoes from the air fryer. Cut a cross on top of each potato and gently squeeze the sides to create an opening. Top with your desired toppings and savor the comforting flavors of fall!

Notes

Choose starchy potatoes like russets for that perfect fluffy texture. Cooking time may vary based on the size of your potatoes and the brand of air fryer—check for doneness before getting your hopes up! Wrap each potato in foil before air frying for easy clean-up, though this may slightly change the texture of the skin.
