Ingredients
  

  • 1 cup pumpkin purée (not pumpkin pie filling)
  • 2 large eggs
  • 1 cup unsweetened almond milk (or milk of choice)
  • 2 tbsp maple syrup or light brown sugar
  • 2 tbsp melted coconut oil or neutral oil
  • 1 tsp vanilla extract
  • 1.5 cups gluten-free all-purpose flour (with xanthan gum)
  • 1.5 tsp baking powder
  • 0.5 tsp baking soda
  • 0.5 tsp cinnamon
  • 0.25 tsp ground ginger
  • 0.25 tsp nutmeg
  • 1 pinch salt
  • mini chocolate chips or melted dark chocolate (optional, for faces)
  • powdered sugar for dusting (optional)
  • nut butter drizzle (optional)

Instructions
 

  • Preheat your waffle maker and lightly grease it with oil or cooking spray. If using a pumpkin-shaped waffle iron, preheat now.
  • In a large bowl, whisk together pumpkin purée, eggs, almond milk, maple syrup, oil, and vanilla until smooth.
  • In another bowl, mix flour, baking powder, baking soda, cinnamon, ginger, nutmeg, and salt.
  • Pour dry mixture into wet mixture and stir until just combined. Do not overmix.
  • Add about ⅓ cup of batter to the waffle iron. Cook for 3–5 minutes until crisp on the outside and tender inside.
  • Decorate with mini chocolate chips, powdered sugar, or nut butter drizzle. Serve warm and enjoy!

Notes

Don’t overmix your batter to keep waffles light. Grease the waffle iron well and let waffles cook fully before opening to prevent sticking. For extra crispiness, replace part of the milk with seltzer water. Decorate with chocolate chips, nut butter drizzle, or powdered sugar for fun Jack O’ Lantern faces.
