Ingredients
  

  • 8 gluten-free flour tortillas (soft and pliable)
  • 2 cups shredded cheese (cheddar, mozzarella, or a blend)
  • 0.5 cup finely chopped cooked chicken or black beans (optional)
  • 0.25 cup diced red bell pepper or olives (optional)
  • Olive oil spray or brushing (for toasting)
  • Guacamole, salsa, or sour cream (for serving)

Instructions
 

  • Lay four tortillas flat. Using a knife or cookie cutter, carve Jack O’ Lantern faces with eyes, mouths, and spooky shapes. These will be the tops.
  • Place the other four tortillas on a baking sheet. Sprinkle evenly with cheese and optional fillings, keeping them away from the edges.
  • Place the carved tortillas on top of the filled ones and press gently to seal.
  • Brush or spray lightly with olive oil. Bake at 375°F (190°C) for 8–10 minutes until golden, or cook in a skillet 3–4 minutes per side.
  • Serve warm with guacamole, salsa, or sour cream for dipping.

Notes

Use a pumpkin-shaped cookie cutter for easy faces, or carve with a small knife. Don’t overfill, and keep the edges clean so they seal properly. Serve warm with guacamole, salsa, or sour cream for dipping!
