Irresistible Gluten-Free Dinner Rolls

Ingredients
  

Dry Ingredients

  • 2.5 cups gluten-free all-purpose flour blend (with xanthan gum included)
  • 0.5 cups brown rice flour
  • 2 tbsp sugar
  • 1.5 tsp instant yeast
  • 1 tsp salt

Wet Ingredients

  • 1 cup warm milk (about 105–110°F) Do not use hot milk as it can kill the yeast.
  • 2 tbsp olive oil
  • 1 large egg, room temperature
  • 2 tbsp melted butter for brushing
  • 1 tsp apple pie spice or cinnamon (optional) For a seasonal touch.

Preparation

  • In a small bowl, whisk the warm milk with sugar and yeast. Let sit for 5–7 minutes until foamy.
  • In a large bowl, combine the gluten-free flour blend, brown rice flour, and salt.
  • Add the yeast mixture, olive oil, and egg to the dry ingredients. Mix with a wooden spoon or paddle attachment until the dough is smooth and slightly sticky.

Rising

  • Cover the bowl with a towel and let the dough rise in a warm place for 45–60 minutes, until slightly puffy.
  • Lightly flour your hands and a work surface with gluten-free flour. Divide dough into 12 equal pieces and shape into balls. Place into a greased 9×13-inch pan, leaving a little space between them.
  • Cover and let rise for 30–40 minutes until the rolls touch.

Baking

  • Preheat oven to 375°F (190°C). Brush the tops with a little milk and sprinkle with extra cinnamon if using.
  • Bake 18–22 minutes until golden brown.
  • Brush warm rolls with melted butter. Serve warm and enjoy!

Notes

Use a good gluten-free all-purpose mix with xanthan gum for best results. Gentle shaping preserves the rise, and rolls should be golden and sound hollow when tapped.
