  • 1/2 teaspoon black pepper
  • 1 piece Zest of 1 lime for extra zing

For the Mango Salsa

  • 1 piece ripe mango, diced
  • 1/2 cup red onion, finely chopped
  • 1 piece jalapeño, seeded and minced optional, for heat
  • 1/4 cup fresh cilantro, chopped
  • Juice of 1 lime
  • Salt to taste

Instructions
 

Marinate the Chicken

  • In a bowl, whisk together the honey, lime juice, olive oil, garlic powder, onion powder, salt, and pepper. Add the chicken breasts, ensuring they are coated evenly in the marinade. Cover and refrigerate for at least 30 minutes, or up to 2 hours for maximum flavor.

Prepare the Mango Salsa

  • While the chicken marinates, combine the diced mango, red onion, jalapeño (if using), cilantro, and lime juice in a separate bowl. Gently toss to mix, adding salt to taste. Set aside to let the flavors marry.

Cook the Chicken

  • Preheat your grill or skillet over medium-high heat. Remove the chicken from the marinade and cook for about 6-7 minutes per side, or until fully cooked (internal temperature should reach 165°F or 75°C). If grilling, you’ll achieve delightful grill marks and extra flavor!

Serve
