Ingredients
  

For the Chicken

  • 4 pieces boneless, skinless chicken thighs
  • 1/4 cup honey
  • 1/4 cup soy sauce (or tamari for gluten-free)
  • 3 cloves garlic, minced
  • 1 tablespoon olive oil
  • Salt and pepper to taste
  • 1 teaspoon sesame seeds (optional)
  • to taste Chopped green onions for garnish (optional)

For the Sweet Potatoes

  • 2 medium sweet potatoes, peeled and cubed
  • 2 tablespoons olive oil
  • 1 teaspoon paprika
  • Salt and pepper to taste

Preparation

  • Preheat your oven to 400°F (200°C).
  • In a bowl, whisk together the honey, soy sauce, minced garlic, olive oil, salt, and pepper.
  • Place the chicken thighs in a zip-top bag or a shallow dish and pour the marinade over them. Seal or cover and let it marinate in the refrigerator for at least 30 minutes, or up to four hours.
  • While the chicken marinates, toss the cubed sweet potatoes in olive oil, paprika, salt, and pepper until evenly coated.

Cooking

  • Spread the sweet potatoes in a single layer on a baking sheet. Roast in the preheated oven for about 25-30 minutes.
  • Heat a large skillet over medium-high heat. Once hot, add the marinated chicken thighs. Cook for about 5-7 minutes on each side until browned and fully cooked, reaching an internal temperature of 165°F (75°C). Sprinkle sesame seeds during the last minute of cooking if desired.

Serving

  • Serve the honey garlic chicken alongside the roasted sweet potatoes. Garnish with chopped green onions if desired.

Notes

For best results, marinate the chicken longer for deeper flavor. Ensure sweet potato cubes are of similar size for even cooking. For a one-pan meal, consider cooking chicken and sweet potatoes together.
