Pasta Ingredients

  • 2 cups gluten-free all-purpose flour (ensure it contains xanthan gum) Use a good quality blend for best results.
  • 2 large eggs
  • 1 tablespoon olive oil (optional for flavor) Drizzle for added richness.
  • 1/2 teaspoon salt
  • as needed cups water Used to form a dough if necessary.

Preparation

  • In a mixing bowl, add the gluten-free flour and salt. Mix well to ensure the salt is evenly distributed.
  • Make a well in the center of the flour and crack the eggs into it. If desired, drizzle in the olive oil.
  • Using a fork, incorporate the flour into the eggs, starting from the edges of the well until the dough starts to come together.
  • Transfer the dough to a clean surface and knead for about 5-7 minutes until smooth and elastic.
  • If the dough is too dry, add water a teaspoon at a time until it reaches the right consistency.
  • Wrap the dough in plastic wrap and let it rest for at least 30 minutes.

Rolling and Cutting

  • Divide the dough into smaller portions and roll out each portion on a lightly floured surface until about 1/8 inch thick.
  • Use a sharp knife or pasta cutter to slice the dough into desired shapes.

Cooking

  • Boil a large pot of salted water and cook the pasta for about 3-5 minutes, or until it floats to the top.

Notes

Ensure to use gluten-free flour with xanthan gum for optimal pasta texture. Fresh pasta cooks much quicker than dried pasta.
