  • 2 cups gluten-free all-purpose flour Ensure it has xanthan gum for best results.
  • 3 large eggs
  • 1 tablespoon olive oil
  • 1/2 teaspoon salt

Mixing the Dry Ingredients

  • In a large mixing bowl, combine the gluten-free all-purpose flour and salt. Whisk them together to ensure an even mix.

Incorporating the Wet Ingredients

  • Create a well in the center of your flour mixture and crack in the eggs and olive oil. Using a fork, gently whisk the eggs and olive oil together, gradually incorporating the flour from the edges of the well.

Kneading the Dough

  • Once the mixture becomes too thick to stir, use your hands to knead the dough in the bowl. If the dough feels too dry, add water, one tablespoon at a time, until it reaches a smooth, pliable consistency.

Resting the Dough

  • Cover the dough with cling wrap or a kitchen towel and let it rest for at least 30 minutes, allowing the flour to hydrate evenly.

Rolling Out the Pasta

  • Divide the rested dough into four pieces and cover portions not currently in use to prevent drying out. Use a rolling pin or pasta machine to roll each piece out to your desired thickness.

Cutting into Shapes

  • Once rolled out, cut the pasta into desired shapes, such as fettuccine or tagliatelle. Dust with additional flour to prevent sticking if necessary.

Cooking the Pasta

  • Bring a large pot of salted water to a boil. Add the pasta and cook for 2-4 minutes depending on thickness, keeping an eye on it as fresh pasta cooks quickly.

Enjoying Your Creation

  • Once cooked to your liking, drain the pasta and toss it with your favorite sauce or toppings. Enjoy!
