Ingredients
  

  • 1 cup cooked quinoa
  • 1 cup steamed broccoli
  • 1/2 cup diced bell pepper
  • 1/2 zucchini, sliced
  • 4 oz grilled chicken breast
  • 1 tbsp olive oil
  • salt and pepper to taste
  • lemon wedge for garnish

Instructions
 

  • Cook quinoa according to package directions.
  • Steam broccoli and zucchini until tender.
  • Grill or pan-sear chicken breast until fully cooked.
  • In a bowl, combine quinoa, vegetables, and chicken.
  • Drizzle olive oil and season with salt and pepper.
  • Toss gently and garnish with lemon wedge.
  • Serve immediately or refrigerate for meal prep.
