  • 2 large zucchini, sliced Use fresh zucchini for the best flavor.
  • 1 pound boneless, skinless chicken breast, cubed Substitute with pre-cooked chicken if rushed.
  • 1 cup shredded mozzarella cheese Dairy-free alternative can be used.
  • 1 cup cherry tomatoes, halved
  • 1 small onion, diced
  • 2 cloves garlic, minced
  • 1 teaspoon dried oregano
  • 1 teaspoon dried basil
  • to taste Salt and pepper
  • 2 tablespoons olive oil

Preparation

  • Preheat the oven to 375°F (190°C).
  • In a large bowl, mix sliced zucchini, diced onions, halved cherry tomatoes, and cubed chicken breast. Drizzle with olive oil, and then season with salt, pepper, oregano, and basil. Make sure everything is evenly coated.
  • In a greased baking dish, layer the zucchini and chicken mixture evenly.
  • Sprinkle the shredded mozzarella on top of the chicken and zucchini mixture.

Baking

  • Place the baking dish in the preheated oven and bake for 30-35 minutes until the chicken is cooked through and the zucchini is tender.
  • Once baked, remove from the oven and let it cool for a few minutes. Garnish with fresh parsley before serving, if desired.
