  • 1 cup gluten-free breadcrumbs Make sure breadcrumbs are gluten-free.
  • 1/2 cup chopped onions
  • 1/2 cup grated carrots
  • 2 cloves garlic, minced
  • 2 tbsp Italian seasoning
  • 1/4 cup dairy-free milk Almond or oat milk are excellent choices.
  • 1 large egg
  • 1/4 cup ketchup Plus extra for topping

Instructions
 

Preparation

  • Preheat your oven to 350°F (175°C).
  • In a large bowl, combine the ground meat, gluten-free breadcrumbs, chopped onions, grated carrots, minced garlic, Italian seasoning, dairy-free milk, egg, ketchup, salt, and pepper. Mix until well combined.
  • Transfer the mixture to a lined loaf pan, shaping it into a loaf.
  • Spread a layer of extra ketchup on top of the loaf.

Baking

  • Place the meatloaf in the preheated oven and bake for 45-55 minutes, or until the internal temperature reaches 160°F (71°C).

Serving

  • Let the meatloaf rest for about 10 minutes before slicing and serving.
