Ingredients

Main ingredients

  • 1 pound large shrimp, peeled and deveined
  • 2 medium cucumbers, diced
  • 1 each bell pepper, diced (red or yellow for color)
  • 1/4 cup fresh dill, chopped
  • 1 each lemon, juiced
  • 2 tablespoons olive oil
  • to taste Salt and pepper

Instructions

Preparation

  • Start by boiling water in a pot. Once boiling, add the shrimp and cook for about 2-3 minutes or until they turn pink and opaque. Drain the shrimp and place them in ice water to stop the cooking process. Once cooled, chop them into bite-sized pieces.
  • While the shrimp cools, chop the cucumbers, bell pepper, and red onion. Add these ingredients to a large mixing bowl along with the fresh dill.
  • In a small bowl, mix together the lemon juice, olive oil, salt, and pepper. Whisk until combined.
  • Add the cooled shrimp to the bowl of vegetables. Drizzle the dressing over the salad and gently toss to combine, ensuring everything is nicely coated.
  • Let the salad chill in the fridge for about 30 minutes before serving to allow the flavors to meld beautifully.

Notes

Use fresh ingredients for the best taste. Feel free to modify the proportions or add ingredients like avocado or cherry tomatoes. Consider adding toasted nuts or seeds for extra texture. Store leftovers in an airtight container in the refrigerator for up to two days.
