  • 4 medium medium-sized russet potatoes Choose uniform-sized potatoes for even cooking.
  • 3 tablespoons olive oil Extra virgin olive oil is recommended for best flavor.
  • 2 teaspoons salt
  • 1 teaspoon freshly ground black pepper
  • 4 tablespoons fresh herbs (such as rosemary, thyme, or parsley) Feel free to experiment with different herb combinations.
  • 2 tablespoons melted butter For a vegan option, replace with extra olive oil or vegan butter.

Instructions
 

Preparation

  • Preheat your oven to 425°F (220°C).
  • Wash and scrub the potatoes thoroughly. Pat them dry with a clean towel.
  • Using a sharp knife, carefully make thin slices in each potato, about 1/8 inch apart, ensuring you don't cut all the way through, leaving about 1/4 inch at the bottom intact.
  • You can place wooden spoon handles or chopsticks on either side of the potato to prevent slicing all the way through.
  • In a small bowl, mix the olive oil, salt, pepper, and melted butter. Add half of the chopped herbs to the mixture.
  • Brush the potato generously with the oil mixture, coating all the slices and allowing some of the oil to seep into the gaps.

Baking

  • Place the potatoes on a baking sheet lined with parchment paper.
  • Bake in the preheated oven for about 40-50 minutes, or until the potatoes are golden-brown and the edges are crispy.
  • During the last 10 minutes of baking, sprinkle the optional grated Parmesan cheese over the potatoes if desired.

Serving

  • Remove from the oven, garnish with the remaining fresh herbs, and serve warm.

Notes

For extra crispiness, you can broil the potatoes for an additional 2-3 minutes after baking. Just keep an eye on them! If you have leftovers, store them in an airtight container in the refrigerator for up to 3 days.
