Ingredients
  

For the quesadillas

  • 4 pieces large tortillas
  • 1 cup black beans (drained and rinsed)
  • 1 medium sweet potato (peeled and diced)
  • 1 cup shredded cheese (cheddar or Mexican blend)
  • 1 teaspoon taco seasoning

Preparation

  • Boil or steam the diced sweet potato until tender, about 10-15 minutes. Once cooked, mash it slightly and mix in the taco seasoning.

Assembly

  • Heat some olive oil in a pan over medium heat. Place one tortilla in the pan, and layer half of it with mashed sweet potato, beans, and cheese. Fold the tortilla in half to create a half-moon shape, pressing down gently.

Cooking

  • Cook for 3-4 minutes on each side, or until the tortilla is golden brown and the cheese is melted. Remove and repeat with the remaining tortillas.

  • Using fun Halloween cookie cutters, slice the quesadillas into spooky shapes like bats, pumpkins, or ghosts.
