  • 2 tablespoons neutral oil (canola or avocado)
  • 1 medium onion, thinly sliced
  • 2 cloves garlic, minced
  • 1 tablespoon fresh ginger, grated
  • 2 cups mixed vegetables (bell pepper, snap peas, carrots), sliced
  • 3 tablespoons soy sauce or tamari Use tamari for gluten-free
  • 1 tablespoon rice vinegar
  • 1 tablespoon honey or maple syrup Adjust sweetness to taste
  • 1 teaspoon toasted sesame oil
  • 1/4 teaspoon black pepper
  • 2 pieces green onions, sliced For garnish
  • to taste toasted sesame seeds for garnish Optional

Preparation

  • Prep your ingredients: chop the vegetables, mince garlic, and measure the sauces.

Cooking

  • Heat a large skillet over medium-high heat and add the neutral oil. When shimmering, add the ground turkey and cook until no longer pink, about 5–6 minutes.
  • Push the turkey to one side of the pan and add the sliced onion, garlic, and ginger. Sauté until the onion softens, about 2–3 minutes.
  • Add the mixed vegetables and cook, stirring often, until tender-crisp, about 3–4 minutes.
  • Stir in soy sauce, rice vinegar, honey, and sesame oil. Toss everything to coat and simmer for 1–2 minutes.
  • Season with black pepper and taste to adjust saltiness. Remove from heat, stir in green onions, and garnish with sesame seeds.

Notes

Use room-temperature turkey for even browning. Don’t overcrowd the pan; cook in batches if needed. Adjust honey and vinegar to suit your taste.
