Ingredients
  

  • 1 cup cooked brown rice
  • 1 grilled chicken breast, sliced
  • 1/2 cup roasted sweet potatoes
  • 1/2 avocado, sliced
  • 1/4 cup black beans
  • 1 tbsp olive oil
  • 1 lime wedge
  • salt & pepper to taste

Instructions
 

  • Preheat oven to 400°F and roast sweet potatoes with olive oil, salt, and pepper for 25 minutes.
  • Grill the chicken breast until golden and fully cooked.
  • Warm the black beans on the stove or microwave.
  • Assemble rice, chicken, sweet potatoes, black beans, and avocado in a bowl.
  • Squeeze lime juice over the top and season to taste.
  • Serve immediately or store for later.

Notes

Customize with quinoa or lentils if desired.
Use pre-cooked ingredients to save time during the week.
