Ingredients
  

Pasta and Sauce Ingredients

  • 8 oz Gluten free pasta (elbows or shells) Elbows are classic, shells add fun monster vibes.
  • 4 cups Fresh spinach Baby spinach works best for a smoother sauce.
  • 2 tbsp Butter or olive oil For wilting the spinach.
  • 1 cup Milk Any kind you like.
  • 1 cup Cheddar cheese, shredded For the creamy cheese flavor.
  • 4 oz Cream cheese or cottage cheese For added creaminess.
  • to taste Salt
  • to taste Pepper
  • 1 tsp Garlic powder Or a small garlic clove, optional.

Instructions
 

Cooking Pasta

  • Cook gluten free pasta in salted water until just tender. Drain and set aside.

Preparing Spinach Sauce

  • Wilt the spinach in a pan with butter or olive oil for 1-2 minutes until it collapses.
  • Blend wilted spinach with milk and cream cheese or cottage cheese until smooth.

Making the Cheese Sauce

  • Pour the green sauce into a pot on low heat. Add shredded cheddar and stir until melted and creamy.
  • Season the sauce with salt, pepper, and garlic to taste.

Combining Pasta and Sauce

  • Stir in the cooked pasta, heating on low for a minute to coat everything nicely.

Notes

For a fun twist, consider adding black olive 'eyes' on top or stirring in cooked chicken for added protein. Optionally freeze the sauce separately for later use.
