For the Turkey Meatballs

  • 1 pound ground turkey
  • 1/2 cup breadcrumbs (gluten-free if desired)
  • 1/4 cup grated Parmesan cheese
  • 1/4 cup chopped parsley
  • 2 cloves garlic (minced)
  • 1 piece egg
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 teaspoon oregano
  • 1/2 teaspoon cumin

For the Lemon Herb Rice

  • 1 cup long-grain rice
  • 2 cups chicken broth
  • 1 piece zest and juice of 1 lemon
  • 1/4 cup chopped fresh dill
  • 1/4 cup chopped parsley
  • Salt and pepper to taste

Preparation

  • Preheat your oven to 400°F (200°C).
  • In a large mixing bowl, combine the ground turkey, breadcrumbs, Parmesan cheese, parsley, garlic, egg, salt, pepper, oregano, and cumin. Mix until well blended, but be careful not to over-mix.
  • Using your hands, shape the mixture into small meatballs, about 1 inch in diameter. Place them on a baking sheet lined with parchment paper.

Cooking

  • Bake the meatballs in the preheated oven for about 20-25 minutes, or until they are cooked through and golden brown.
  • While the meatballs are baking, rinse the rice in cold water until the water runs clear. In a medium saucepan, bring the chicken broth to a boil.
  • Add the rice, lemon juice, lemon zest, and a pinch of salt. Reduce the heat to low, cover, and simmer for about 15-20 minutes, or until the rice is tender and the liquid is absorbed.
  • Once cooked, fluff the rice with a fork and stir in the chopped dill and parsley.

Notes

Always check the internal temperature of your meatballs to ensure they reach 165°F for safe consumption. For a gluten-free version, opt for gluten-free breadcrumbs or hash out a mixture of crushed rice crackers and spices.
