Ingredients
  

For the Turkey Meatballs

  • 1 pound ground turkey
  • 1/4 cup breadcrumbs (use gluten-free if needed)
  • 1/4 cup finely chopped onion
  • 2 cloves garlic, minced
  • 1 tablespoon fresh parsley, chopped
  • 1 teaspoon dried oregano
  • Salt and pepper to taste
  • 1 medium egg

For the Bowls

  • 2 cups cooked brown rice or quinoa
  • 1 medium cucumber, chopped
  • 1 cup cherry tomatoes, halved
  • 1/2 medium red onion, thinly sliced
  • Feta cheese, crumbled (optional)
  • Tzatziki sauce (for drizzling)

Instructions
 

Prepare the Meatballs

  • In a large bowl, mix together the ground turkey, breadcrumbs, onion, garlic, parsley, oregano, salt, pepper, and egg. Form the mixture into small meatballs, about 1 inch in diameter.

Cook the Meatballs

  • Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper and place the meatballs on it. Bake for 20–25 minutes or until they are cooked through and golden brown.

Assemble the Bowls

  • While the meatballs are baking, prepare your bowls. Start with a base of brown rice or quinoa. Top with chopped cucumber, cherry tomatoes, and red onion.

Add the Meatballs

  • Once the meatballs are done, place 3-4 meatballs on top of each bowl.

Finish with Toppings

  • Crumble feta cheese over the bowls and drizzle with tzatziki sauce for added flavor.
