Greek Turkey Meatball Bowls

Ingredients
  

For the Meatballs

  • 1 lb Ground turkey Use high-quality ground turkey for best flavor
  • 1/4 cup Fresh parsley, chopped Fresh is preferred
  • 1/4 cup Fresh mint, chopped Fresh is preferred
  • 1 medium Onion, finely diced
  • 2 cloves Garlic, minced
  • 1 large Egg Binding agent for the meatballs
  • 1/2 cup Gluten-free breadcrumbs Regular breadcrumbs can also be used
  • 1 tsp Ground cumin
  • 1 tsp Oregano
  • 1 tsp Salt
  • 1/2 tsp Pepper

For Assembly

  • 2 cups Your favorite grain (brown rice, quinoa, or cauliflower rice)
  • 1 cup Tzatziki sauce Store-bought or homemade
  • 1 cup Cherry tomatoes, halved
  • 1 cup Cucumber, diced
  • 1/2 cup Kalamata olives Optional
  • 1/2 cup Feta cheese Optional

Instructions
 

Preparation

  • Preheat the Oven to 400°F (200°C).
  • In a large mixing bowl, combine ground turkey, parsley, mint, onion, garlic, egg, breadcrumbs, cumin, oregano, salt, and pepper. Mix thoroughly.
  • Form the mixture into meatballs, approximately 1.5 inches in diameter. Place them on a baking sheet lined with parchment paper.

Cooking

  • Bake the meatballs in the preheated oven for 20-25 minutes or until cooked through and golden brown.
  • While the meatballs are baking, prepare your choice of grain according to the package instructions.

Assembly

  • Layer the cooked grain at the bottom of each bowl. Top with meatballs, tzatziki sauce, cherry tomatoes, cucumber, and kalamata olives if desired. Finish with crumbled feta cheese.

Notes

Store leftover meatballs in an airtight container in the fridge for up to four days. You can freeze them for later use, and reheat in the microwave or oven.
