Ingredients
  

For the Meatballs

  • 1 pound ground turkey
  • 1/4 cup breadcrumbs (or gluten-free breadcrumbs for a GF option) Use gluten-free breadcrumbs for a gluten-free option.
  • 1 large egg
  • 1 tablespoon fresh parsley, chopped
  • 2 cloves garlic, minced
  • 1 teaspoon dried oregano
  • to taste salt and pepper

For the Bowl

  • 2 cups cooked quinoa or brown rice Quinoa or brown rice can be used based on preference.
  • 1 cup cucumber, diced
  • 1 cup cherry tomatoes, halved
  • 1/4 cup red onion, thinly sliced
  • 1/2 cup feta cheese, crumbled (optional) Feta cheese is optional.
  • to taste fresh lemon juice for dressing
  • to taste olive oil for drizzling

Instructions
 

Prepare the Meatballs

  • Preheat your oven to 400°F (200°C).
  • In a large bowl, mix together the ground turkey, breadcrumbs, egg, parsley, garlic, oregano, salt, and pepper until well combined.
  • Shape the mixture into meatballs about 1 inch in diameter and place them on a lined baking sheet.

Bake the Meatballs

  • Bake the meatballs for 20-25 minutes, or until they are cooked through and golden brown. Use a meat thermometer to ensure they reach an internal temperature of 165°F (74°C).

Prepare the Bowl

  • While the meatballs are baking, cook quinoa or brown rice according to package instructions.
  • In a bowl, combine diced cucumber, halved cherry tomatoes, and sliced red onion.

Assemble the Bowls

  • Place a serving of quinoa or rice at the bottom of each bowl.
  • Top with baked meatballs, and add the fresh veggie mix.
  • Drizzle with olive oil and freshly squeezed lemon juice. Finish with crumbled feta cheese, if desired.

Notes

Moisture Control: To keep your meatballs moist, consider adding a splash of milk or broth to the mixture. Baking Alternatives: If you prefer a crispier texture, you can pan-fry the meatballs instead of baking them.
