  • 2 teaspoons dried oregano
  • 1 teaspoon garlic powder

For the Lemon Rice

  • 1 cup long-grain rice
  • 2 cups chicken broth (low sodium)
  • 1 piece Juice of 1 lemon
  • 1 piece Zest of 1 lemon
  • 2 tablespoons butter
  • to taste Salt

Instructions
 

Prepare the Chicken Marinade

  • In a bowl, combine olive oil, oregano, garlic powder, lemon juice, lemon zest, salt, and pepper.
  • Add the chicken thighs to the bowl, ensuring they are well coated. Allow the chicken to marinate for at least 30 minutes at room temperature or up to 2 hours in the refrigerator for maximum flavor.

Cook the Lemon Rice

  • In a medium saucepan, melt the butter over medium heat.
  • Add the rice and toast it for 1-2 minutes until it becomes slightly golden.
  • Pour in the chicken broth, lemon juice, and lemon zest. Stir to combine.
  • Bring the mixture to a boil, then reduce the heat to low, cover, and simmer for about 15 minutes or until the rice is cooked and the liquid is absorbed.

Cook the Chicken

  • While the rice is cooking, heat a skillet over medium-high heat.
  • Add the marinated chicken thighs to the skillet, cooking for about 5-7 minutes on each side or until fully cooked through and golden brown. Use a meat thermometer to ensure the internal temperature reaches 165°F (75°C).

Assemble and Serve

  • Once the chicken and rice are both ready, fluff the rice with a fork and serve it on a plate.
  • Top with the cooked chicken and sprinkle fresh parsley for a pop of color.
