Glutenfreier Spiderweb Cheesecake

Ingredients
  

For the crust

  • 2 cups gluten free cookie crumbs (or crushed gluten free chocolate biscuits)
  • 6 tablespoons melted butter

For the filling

  • 24 ounces cream cheese, room temp
  • 3/4 cup sugar
  • 1 cup sour cream
  • 1 teaspoon vanilla
  • 3 large eggs, room temp
  • 2 tablespoons cornstarch helps with texture
  • 1 pinch salt

For the spiderweb decoration

  • 1/3 cup melted dark chocolate
  • 1/3 cup melted white chocolate

Instructions
 

Preparation

  • Preheat the oven to 325°F (163°C). Line the bottom of your springform pan with baking paper.
  • Mix the cookie crumbs and melted butter together, then press the mixture into the bottom of the springform pan for the crust.
  • Bake the crust for 10 minutes and then let it cool.

Filling

  • In a mixing bowl, beat the cream cheese and sugar until smooth.
  • Add the sour cream and vanilla, followed by the cornstarch and salt.
  • Add the eggs one at a time, mixing on low until just combined to avoid overmixing.
  • Pour the filling into the cooled crust.
  • For less cracks, place the springform pan into a larger pan and add hot water halfway up the sides.
  • Bake for 50-60 minutes until the edges are set but the center has a gentle jiggle.
  • Turn off the oven, crack the door, and leave the cheesecake in the oven for 30 minutes.
  • Let the cheesecake cool on the counter, then chill for at least 6 hours in the refrigerator.

Decorating

  • Once chilled, melt the dark and white chocolate and place each in a small piping bag.
  • Pipe circles on top of the cheesecake alternating between dark and white chocolate.
  • Using a toothpick, drag lines from the center outward to create a spiderweb pattern on top.

Notes

Chill the cheesecake fully before doing the web design for the best results. If the cheesecake cracks, don't worry, the spiderweb decoration will cover most imperfections.
