Glutenfreie Jack-o'-Lantern Breakfast Quesadillas

Main Ingredients

  • 2 pieces gluten free tortillas Ensure they are certified gluten-free.
  • 2 pieces eggs Scrambled.
  • 1 cup orange colored filling (shredded cheese or alternatives) Dairy free cheese or a mix with pumpkin puree can be used.
  • as needed optional add-ins (cooked sausage, bacon crumbles, bell pepper, spinach, onions) Customize to taste.
  • as needed butter or oil For cooking.
  • 1 small knife or kitchen scissors For cutting out the face.

Preparation

  • Scramble your eggs first and set them aside.
  • Make your jack o' lantern face by cutting out two eyes and a mouth from one tortilla.

Cooking

  • Heat a nonstick skillet on medium low and add a tiny bit of oil or butter.
  • Put the uncut tortilla in the pan first and sprinkle on the orange cheese. Add the scrambled eggs and any extra fillings.
  • Place the face tortilla on top, pressing down gently.
  • Cook for 2 to 4 minutes until the bottom is golden. Flip carefully and cook the other side.
  • Let it sit for a minute, then slice. This helps the cheese set.

Notes

Store leftovers in the fridge wrapped in foil or in a container for 2 to 3 days. Reheat in a skillet for best results, or use a toaster oven. Warm tortillas before filling to prevent cracking.
