Ingredients
  

Waffle Ingredients

  • 1.75 cups Gluten free flour blend Use a 1 to 1 blend if you can.
  • 1 tablespoon Baking powder
  • 2 tablespoons Sugar Or honey (1 1/2 tablespoons) can be used.
  • 0.5 teaspoon Salt
  • 1.5 cups Milk Dairy or non-dairy.
  • 2 large Eggs Use room temperature for better results.
  • 0.33 cups Melted butter or oil Plus a little extra for the waffle maker if needed.
  • 1 teaspoon Vanilla extract

Additional Notes

  • 0.25 teaspoon Xanthan gum Add if your flour blend does not include it.

Preparation

  • Preheat your waffle maker.
  • In a bowl, whisk the flour blend, baking powder, sugar, and salt.
  • In another bowl, whisk together the milk, eggs, melted butter, and vanilla.
  • Pour the wet ingredients into the dry ingredients and stir until combined, being careful not to overmix.
  • Let the batter sit for 5 minutes to allow the flour to hydrate.

Cooking

  • Cook in the preheated waffle maker according to the manufacturer's instructions, usually about 4 to 6 minutes until steam slows down.
  • Avoid opening the waffle maker too early to ensure the waffle sets properly.

Notes

For best results, use room temperature ingredients and lightly grease the waffle maker. Keep finished waffles warm in a 200°F oven on a wire rack. To make egg-free waffles, substitute with a flax egg or applesauce.
