Ingredients
  

  • 1 cup almond flour
  • 1/3 cup tapioca starch
  • 1/3 cup oat flour
  • 1 tbsp sugar
  • 1 tbsp baking powder
  • 1/4 tsp salt
  • 2 large eggs separated
  • 1 cup milk of choice
  • 1 tbsp apple cider vinegar
  • 1/4 cup melted butter or coconut oil
  • 1 tsp vanilla extract

Instructions
 

  • Preheat your waffle iron.
  • In a small bowl, combine milk and apple cider vinegar; let sit for 5 minutes.
  • In a large bowl, whisk together almond flour, tapioca starch, oat flour, baking powder, sugar, and salt.
  • Add egg yolks, milk mixture, melted butter, and vanilla to the dry ingredients and stir until just combined.
  • In a separate bowl, beat egg whites until stiff peaks form.
  • Gently fold egg whites into the batter until incorporated—do not overmix.
  • Let the batter rest for 5–10 minutes.
  • Pour batter into preheated waffle iron and cook according to manufacturer’s instructions until golden and crisp.
  • Serve warm with toppings of choice.

Notes

For extra crispy waffles, add 1 tbsp cornstarch to the dry ingredients. These freeze and reheat well—perfect for meal prep.
