Gluten Free Tortillas

These warm, comforting gluten-free tortillas are easy to make and perfect for various fillings or simply enjoyed with butter.

Ingredients
  

Dough Ingredients

  • 2 cups gluten-free all-purpose flour Use a blend that includes xanthan gum for best results.
  • 1/2 tsp salt
  • 1/2 tsp baking powder
  • 3 tbsp olive oil Can substitute with coconut oil or melted butter.
  • 3/4 cup warm water Adjust as needed to get a pliable dough.

Instructions
 

Prepare the Dough

  • In a large bowl, mix together the gluten-free flour, salt, and baking powder until well combined.
  • Add the olive oil and warm water, mixing gradually until a dough forms.

Knead the Dough

  • On a lightly floured surface, knead the dough for about 1-2 minutes until it becomes smooth. If the dough is sticky, add more flour a little at a time.

Divide and Shape

  • Divide the dough into equally sized balls (about the size of a golf ball).
  • Roll each ball into a flat circle, about 6-8 inches in diameter.

Cook the Tortillas

  • Heat a skillet over medium-high heat and place a rolled tortilla in the skillet.
  • Cook for about 30 seconds on each side until light brown spots appear. Repeat this with the remaining tortillas.

Keep Warm

  • As you cook, keep the tortillas warm by wrapping them in a clean kitchen towel.

Notes

These tortillas can also be made into herbed, smoky, or sweet varieties for extra flavor. Store in an airtight container in the refrigerator or freeze for longer storage.
