Ingredients
  

  • 1 lb lean ground turkey
  • 1 tbsp olive oil
  • 1 tsp chili powder
  • 1 tsp ground cumin
  • 1 tsp smoked paprika
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 1 cup cooked brown rice or cauliflower rice
  • 1 cup black beans, rinsed and drained
  • 1 cup grilled bell peppers and red onion
  • 1/2 cup corn kernels (fresh or thawed frozen)
  • 1 avocado, sliced or cubed
  • 1/2 cup fresh salsa
  • fresh lime wedges, for serving
  • salt and pepper, to taste

Instructions
 

  • Heat olive oil in a large skillet over medium heat. Add ground turkey and cook until browned, breaking it up with a spatula.
  • Add chili powder, cumin, smoked paprika, garlic powder, onion powder, salt, and pepper. Stir to coat evenly and simmer 2–3 minutes more.
  • While turkey cooks, prep your base (rice, cauliflower rice, or lettuce), warm the beans, and chop vegetables and toppings.
  • Assemble bowls: start with base, add ground turkey, beans, grilled veggies, corn, avocado, and salsa. Squeeze fresh lime over each bowl.
  • Serve immediately or store components separately for meal prep. Add fresh toppings just before serving.

Notes

Customize your base with brown rice, cauliflower rice, or romaine. For dairy free or Whole30 versions, skip cheese and use avocado or dairy-free crema. Meal preps well for up to 4 days. Keep toppings fresh and add before serving.
