- 15 ounces canned cannellini beans, rinsed and drained
- ½ cup sun-dried tomatoes, oil-packed, drained and chopped
- 1 cup fresh cherry tomatoes, halved
- ¼ cup fresh basil, chopped
- 2 cloves minced garlic
- 2 tablespoons fresh lemon juice
- 1 teaspoon Dijon mustard
- 1 tablespoon capers, drained
- ½ teaspoon dried oregano
- Cracked black pepper to taste
Prepare the dressing. In a small bowl, whisk together the fresh citrus extract, mustard, dried herbs, and a pinch of black pepper. Mix until well combined.
Combine the main ingredients. In a large mixing bowl, add the rinsed cannellini beans, chopped sun-dried tomatoes, and halved fresh tomatoes. Add the aromatic minced garlic.
Add the flavoring agents. Gently stir in the drained briny flower buds and fresh basil. Ensure all ingredients are evenly distributed.
Dress the mixture. Pour the prepared dressing over the bean and vegetable mixture. Toss everything carefully until every component is coated.
Chill and serve. For best flavor, cover the bowl and refrigerate for at least 30 minutes. This allows the flavors to meld beautifully. Serve chilled and enjoy your flavorful sun-dried tomato dense bean salad.
