  • 4 cups fresh strawberries, hulled and sliced Best with fresh strawberries for flavor and texture.
  • 1/4 cup coconut sugar (or refined sugar) Adjust based on sweetness of strawberries.
  • 2 tablespoons cornstarch
  • 1 teaspoon vanilla extract
  • 1 teaspoon lemon juice
  • 1/2 teaspoon ground cinnamon

For the cobbler topping

  • 1 cup gluten-free all-purpose flour
  • 1/2 cup almond milk (or another dairy-free milk) Oat milk or coconut milk can be used as nut-free alternatives.
  • 1/4 cup coconut sugar
  • 2 teaspoons baking powder
  • 1/4 teaspoon salt
  • 2 tablespoons coconut oil, melted
  • 1 teaspoon vanilla extract

Instructions
 

Preparation

  • Preheat your oven to 350°F (175°C). Lightly grease an 8-inch square baking dish with coconut oil.
  • In a mixing bowl, combine the sliced strawberries, coconut sugar, cornstarch, vanilla extract, lemon juice, and ground cinnamon. Gently toss until the strawberries are evenly coated. Pour this mixture into the prepared baking dish.
  • In another bowl, whisk together the gluten-free flour, coconut sugar, baking powder, and salt. Add the almond milk, melted coconut oil, and vanilla extract; stir until just combined.
  • Drop spoonfuls of the cobbler batter over the strawberry filling, allowing some strawberry mixture to remain visible.

Baking

  • Bake in the preheated oven for about 30-35 minutes, or until the topping is golden brown and a toothpick inserted into the cobbler comes out clean.

Serving

  • Allow the cobbler to cool for a few minutes before serving. It can be served on its own or warm with a scoop of dairy-free ice cream.

Notes

Store cooled cobbler properly; it can last for about 3 days at room temperature or up to a week in the refrigerator. Reheat slices in the microwave or enjoy cold. Consider variations like adding a streusel topping or mixing in other berries.
