Ingredients
  

For the strawberry filling

  • 4 cups fresh strawberries, hulled and halved (or 4 cups frozen, thawed)
  • 1/2 cup granulated sugar Adjust to taste depending on berry sweetness
  • 2 tablespoons lemon juice
  • 2 tablespoons cornstarch

For the cobbler batter (dairy-free and gluten-free)

  • 1 cup gluten-free all-purpose flour blend
  • 1/2 cup granulated sugar
  • 1 1/2 teaspoons baking powder
  • 1/4 teaspoon salt
  • 1 large egg, room temperature
  • 1/2 cup unsweetened dairy-free milk (such as almond, oat, or soy)
  • 1/4 cup dairy-free butter alternative or neutral oil
  • 1 teaspoon vanilla extract

Optional streusel topping

  • 1/2 cup gluten-free oats
  • 1/4 cup brown sugar
  • 2 tablespoons dairy-free butter alternative, cold and cubed
  • Pinch of cinnamon

Instructions
 

Preparation

  • Preheat your oven to 375°F (190°C). In a medium bowl, toss the strawberries with sugar, lemon juice, and cornstarch. Let sit while you prepare the batter so the juices begin to release.

Make the batter

  • In a mixing bowl, whisk together the gluten-free flour, sugar, baking powder, and salt. In another bowl, beat the egg with dairy-free milk, oil, and vanilla. Stir wet into dry until just combined.

Assemble the cobbler

  • Pour the strawberry mixture into a greased 8-inch baking dish, spreading evenly. Spoon the batter over the strawberries in dollops and gently spread to cover most of the fruit; it will bake into a lovely top.

Optional Streusel

  • If using streusel, combine oats, brown sugar, and cinnamon. Cut in the cold dairy-free butter alternative until crumbly, then sprinkle over the batter.

Bake

  • Bake for 30–40 minutes or until the top is golden and the filling bubbles at the edges. Let cool 10–15 minutes before serving so the filling sets.

Notes

Use ripe strawberries for the best flavor; if they’re tart, add a little more sugar to the filling. For a smoother batter, don’t overmix — a few lumps are fine. If using frozen berries, do not refreeze; thaw and drain excess liquid to avoid a watery cobbler. To check doneness, insert a toothpick into the topping; it should come out mostly clean and the filling should be bubbling.
