Ingredients
  

  • 1 tbsp olive oil
  • 1 lb ground beef (85% lean recommended)
  • 1 medium yellow onion, diced
  • 2 garlic cloves, minced
  • 2 carrots, peeled and diced
  • 1 cup frozen peas
  • 2 tbsp tomato paste
  • 1 tsp dried thyme
  • 1 tsp dried rosemary
  • 1/2 tsp paprika
  • salt and pepper to taste
  • 1 cup low-sodium beef broth
  • 1 tbsp cornstarch or arrowroot powder
  • 2 lbs russet potatoes, peeled and chopped
  • 4 tbsp unsalted butter or dairy-free alternative
  • 1/2 cup milk or unsweetened non-dairy milk
  • salt to taste (for potatoes)
  • shredded cheese for topping (optional)

Instructions
 

  • Place chopped potatoes in a large pot, cover with cold water, and add a generous pinch of salt. Bring to a boil, then reduce heat and simmer until fork-tender, about 12–15 minutes. Drain, return to pot, and mash with butter and milk until smooth. Season with salt. Set aside.
  • Heat olive oil in a large skillet over medium heat. Add onion and carrots. Sauté for 5–7 minutes until softened. Add garlic and ground beef. Cook until beef is browned, breaking it up as it cooks.
  • Stir in tomato paste, thyme, rosemary, paprika, salt, and pepper. Pour in beef broth and bring to a simmer. Whisk cornstarch with a tablespoon of water in a small bowl, then add to skillet. Stir until thickened. Mix in peas and simmer 3 more minutes. Remove from heat.
  • Preheat oven to 400°F (200°C). Spoon beef mixture into a 9x9-inch baking dish. Spread mashed potatoes evenly on top. Use a fork to create texture. Optional: top with shredded cheese.
  • Bake for 20–25 minutes until bubbling and lightly golden on top. Let rest 5–10 minutes before serving.

Notes

Customize it with mashed sweet potatoes, add mushrooms for depth, or sprinkle shredded cheese on top before baking. Can be made dairy-free with plant-based butter and milk. Freezes well and reheats like a dream, ideal for batch cooking or make-ahead meals.
