Preparation

  • In a large bowl, whisk together the gluten-free flour, sugar, and salt.
  • Add the chilled and cubed butter, mixing until the mixture resembles coarse crumbs.
  • In a separate bowl, whisk the egg and stir in 4 tablespoons of cold water.
  • Gradually mix the wet ingredients into the dry ingredients, adding more water as needed until the dough holds together.

Chilling the Dough

  • Divide the dough into two equal parts and shape each into a rectangle.
  • Wrap in plastic wrap and refrigerate for at least 30 minutes.

Rolling Out the Dough

  • On a lightly floured surface, roll out one dough rectangle to approximately 1/8 inch thick.
  • Use a sharp knife or pizza cutter to create rectangles or squares, approximately 3 inches wide and 4 inches long.
  • Repeat with the second rectangle.

Assembling the Pop Tarts

  • Place half of the dough rectangles on a parchment-lined baking sheet.
  • Add a spoonful of your chosen filling in the center of each rectangle, leaving a border around the edges.
  • Top with another rectangle of dough and gently press the edges to seal.
  • Use a fork to crimp the edges for an attractive finish.

Baking

  • Preheat your oven to 350°F (175°C).
  • Bake the pop tarts for about 20-25 minutes or until golden brown.
  • Allow them to cool on a wire rack before glazing.
