  • 1 teaspoon baking powder
  • 1 teaspoon salt
  • 1/4 cup olive oil
  • 3/4 cup warm water
  • 1 teaspoon apple cider vinegar

For the filling

  • 1 cup mozzarella cheese, shredded
  • 1/2 cup pizza sauce You can use store-bought or homemade.
  • 1/2 cup pepperoni or your preferred protein Feel free to substitute with vegetables.

Instructions
 

Preparing the Dough

  • Mix the gluten-free flour, baking powder, and salt in a large mixing bowl.
  • In a separate bowl, whisk together the olive oil, warm water, and apple cider vinegar. Pour this mixture into the dry ingredients and mix until a soft, pliable dough forms.
  • On a floured surface (using gluten-free flour), knead the dough lightly for a few minutes.

Assembling Your Pizza Hot Pockets

  • Preheat your oven to 400°F (200°C).
  • Roll out your dough to about 1/4 inch thick. Use a round cutter or a glass to cut out circles, approximately 5-6 inches in diameter.
  • On one half of each circle, spread about a tablespoon of pizza sauce and sprinkle with mozzarella cheese and your chosen protein.
  • Fold the dough over the filling and crimp the edges tightly to seal.

Baking

  • Place the assembled pockets on a baking sheet lined with parchment paper. Brush the tops with a bit of olive oil.
  • Bake in the preheated oven for 15-20 minutes or until the pockets are golden brown.
