Ingredients
  

For the crust

  • 1.5 cups gluten-free all-purpose flour blend
  • 0.5 cups almond flour
  • 0.25 cups granulated sugar
  • 0.25 teaspoons salt
  • 0.75 cups cold unsalted butter, cubed

For the pecan pie filling

  • 2 large eggs
  • 0.5 cups brown sugar, packed
  • 0.5 cups light corn syrup
  • 2 tablespoons melted butter
  • 1 teaspoon vanilla extract
  • 0.25 teaspoons salt
  • 1.5 cups chopped pecans (toasted for best flavor)

Optional streusel topping

  • 0.5 cups gluten-free oats
  • 0.25 cups brown sugar
  • 3 tablespoons melted butter

Instructions
 

Preheat and prep

  • Preheat oven to 350°F (175°C). Line a 9x9-inch baking pan with parchment.

Make the crust

  • In a bowl, whisk together the gluten-free all-purpose flour, almond flour, sugar, and salt.
  • Cut in cold butter until the mixture resembles coarse crumbs.
  • Press the mixture evenly into the bottom of the prepared pan. Bake for 12–15 minutes, or until the edges are lightly golden. Remove from oven and set aside.

Prepare the filling

  • Whisk eggs, brown sugar, corn syrup, melted butter, vanilla, and salt in a medium bowl until smooth.
  • Stir in the chopped toasted pecans.

Assemble and bake

  • Pour the filling over the hot crust and spread evenly.
  • If using the streusel, combine oats, brown sugar, and melted butter and sprinkle over the top.
  • Bake for 20–25 minutes, or until the filling is set but still slightly jiggles in the center.

Cool and slice

  • Allow bars to cool completely in the pan on a wire rack, then chill for at least 2 hours.
  • Lift from pan using the parchment and cut into squares.

Notes

For a fun twist after baking, serve a small square with a spoonful of whipped cream or a drizzle of salted caramel. Use a good gluten-free flour blend labeled as a 1:1 replacement for best texture. Toast your pecans for the best flavor.
