Ingredients
  

For the peach filling

  • 6 cups fresh peaches, peeled and sliced (or use frozen, thawed) Use ripe, flavorful peaches for the best flavor.
  • 1/3 cup coconut sugar or brown sugar
  • 1 tablespoon lemon juice
  • 2 teaspoons cornstarch (or arrowroot starch) If the filling seems thick, add an extra tablespoon.
  • 1/2 teaspoon ground cinnamon
  • 1 pinch salt

For the cobbler topping

  • 1 1/2 cups gluten-free all-purpose flour blend (1:1 mix) Measure flour by spooning into the measuring cup and leveling off.
  • 1/4 cup coconut sugar
  • 2 teaspoons baking powder
  • 1/4 teaspoon baking soda
  • 1/4 teaspoon salt
  • 6 tablespoons dairy-free butter alternative, cold and cubed Keep the dairy-free butter cold for a flaky topping.
  • 1/2 cup unsweetened almond milk (or other plant milk) To make this nut-free, substitute with oat or rice milk.
  • 1 teaspoon vanilla extract

Instructions
 

Preparation

  • Preheat your oven to 375°F (190°C). Grease a 9x13-inch baking dish with a little dairy-free butter or neutral oil.
  • In a large bowl, toss the peach slices with coconut sugar, lemon juice, cornstarch, cinnamon, and a pinch of salt until evenly coated. Let the mixture sit for 5 minutes to develop juices.
  • Pour the peach mixture into the prepared baking dish, spreading it into an even layer.

Making the topping

  • In another bowl, whisk together the gluten-free flour, coconut sugar, baking powder, baking soda, and salt.
  • Cut in the cold dairy-free butter alternative with a pastry cutter or fork until the mixture resembles coarse crumbs.
  • Stir in the almond milk and vanilla until just combined — a few lumps are fine.
  • Use a spoon to drop dollops of the topping over the peaches, leaving small gaps for steam to escape.

Baking

  • Place the cobbler in the oven and bake for 35–40 minutes, until the topping is golden and the peach juices are bubbling.
  • If the top browns too quickly, tent lightly with foil.

Serving

  • Let the cobbler cool for 10–15 minutes before serving to allow the filling to set slightly.
  • Serve warm with dairy-free ice cream or a spoonful of almond milk yogurt.

Notes

Cover the cooled cobbler tightly and refrigerate for up to 4 days. To reheat, warm in a 325°F oven for 10–15 minutes.
